Notes BeMyWine : Champagne Ponsart-Delagarde Le Sous-Trait is an artisanal Extra-Brut from the Janvry and Germigny terroirs, predominately made from Meunier (70 %) with Chardonnay (30 %). It features spontaneous fermentation, full malolactic conversion, and ageing in both stainless steel and new oak, expressing a pure and vibrant sense of place. Based on the 2022 vintage and enhanced by 50% reserve wines aged in a perpetual reserve initiated in 2004, Sélèque’s NV Extra Brut Solessence exudes a bouquet of ripe citrus, peach and freshly baked bread. On the palate, it is medium- to full-bodied, broad and textural, with a generous core of fruit underpinned by ripe yet lively acidity, exhibiting a phenolic structure and an assertive bitterness on the finish. Vinified in equal parts stainless steel and oak, it was disgorged in August 2024 with a dosage of 1.5 grams per liter. The blend comprises nearly equal proportions of Chardonnay and Pinot Meunier, with an additional 10% Pinot Noir.

Disgorged in August 2024 with a dosage of 1.5 grams per liter, this rosé counterpart is likewise anchored in the 2022 vintage. Sélèque’s latest NV Extra-Brut Solessence Rosé includes 5% Pinot Noir red wine from 2020, while 10% of the Pinot Meunier component underwent maceration. The assemblage consists of 45% Chardonnay, 40% Pinot Meunier and 15% Pinot Noir, incorporating 40% reserve wines matured in a perpetual reserve. Aromatically expressive, it opens with notes of raspberry, orange peel and brioche. On the palate, it is medium- to full-bodied, ample and demonstrative, with ripe yet vibrant acidity, displaying a rich fruit core and phenolic grip that makes an even more assertive impression than its white counterpart.
