Notes bemywine : For this Wijnbergperzik, we macerated vineyard peaches from the field of Ludo Rosseels, Gelrode, Brabant, Flanders. For macerating and blending, we used one- and two-year lambikken, originating from eleven different brews and five different barrels. The peaches macerated for more than three months on wooden barrels. The final fruit proportion is 398 grams of vineyard peaches per litre of Wijnbergperzik. About 70% of the cereals for this pure 3 Fonteinen blend used were sourced from our Cereal Collective. Bottled on 07/12/2023.

Notes BeMyWine : Solessence Rosé showcases the harmony of Champagne’s three varietals: the brightness of Meunier, the character of Pinot Noir, and the freshness of Chardonnay. A blend of 45% Chardonnay, 40% Meunier, and 15% Pinot Noir, it delivers an authentic rosé without artifice. Vinified in stainless steel and oak barrels with a proportion of reserve wines, it develops depth and refinement. Finished as an Extra Brut (2 g/L), it impresses with balance, purity, and elegance.

Disgorged in August 2024 with a dosage of 1.5 grams per liter, this rosé counterpart is likewise anchored in the 2022 vintage. Sélèque’s latest NV Extra-Brut Solessence Rosé includes 5% Pinot Noir red wine from 2020, while 10% of the Pinot Meunier component underwent maceration. The assemblage consists of 45% Chardonnay, 40% Pinot Meunier and 15% Pinot Noir, incorporating 40% reserve wines matured in a perpetual reserve. Aromatically expressive, it opens with notes of raspberry, orange peel and brioche. On the palate, it is medium- to full-bodied, ample and demonstrative, with ripe yet vibrant acidity, displaying a rich fruit core and phenolic grip that makes an even more assertive impression than its white counterpart.
