I tasted again the excellent 2016 Savagnin Reserve du Caveau, a wine that did not make it to the Vin Jaune bottling. It comes from a cooler year with lots of freshness and acidity, and the wine is aging nicely. It's aromatic, varietal and fresh, with some added aromatic complexity that it has gained with the time in bottle. It matured in used 500-liter barrels that are filled to the top initially and then never topped up, so this developed flor and aged under the veil for almost six years. This is a bottling of the more fruit-driven barrels. It has the classical notes of iodine, peat, nuts and spices, in an elegant and subtle way. 2,200 bottles produced.
